Okay, I'll participate 
Thanksgiving dinner for us includes:
TURKEY mmmm...
Mashed potatoes (the real kind never from a box)
Green Bean casserole
Sweet potatoes made w/ brown sugar, butter, and marshmallows
Stuffing (some cooked in turkey, some cooked normal)
Brown gravy
Brown n Serve rolls
"Fruit salad" (aka heavenly hash)- Canned mixed fruit w/ mini marshmallows, bananas, walnuts, and gelatin
Pumpkin pie
Lemon meringue pie (my fave - I'm the one the makes it)
Jelled Cranberry sauce - it depends because it used to be a staple. Then one year it was just us siblings and we decided at the store that no one would really eat it
Deviled eggs!! Those things are eaten all morning/day long!
Apple pie - sometimes my brother's mother in law will bring that
We cook our pies the day before thanksgiving, put the turkey in as soon as someone wakes up (really early), then start from there.

That's right! I forgot to mention gravy! We "candy" our sweet potatoes also.

This has changed a lot over the years. Since my wife's family has different traditions, I will describe what we had when I was a kid.
HUGE turkey. Grandma Wallace would start it in a slow oven the day before. Basted constantly.
Grandpa Wallace would make the stuffing - with a TON of sage. The stuffing would be put into the bird before going to bed.
In the morning they would put in a ham with the turkey in the oven.
Grandma would make "dressing" for those who could not take the sage overload with the stuffing.***
When they were done, there were almost a hundred dinner rolls to bake.
My mom usually made a green bean caserole.
My stepdad had his "Fluffy Whites" whipped potatoes that no one else could make properly.
My aunt Kim (Korean) would bring Kimche and Korean squash. (similar to a butternut)
There was a variety of bean salads, sweet potatoes, and other fresh vegetables from a variety of family members and guests.
There was a friendly competition between Grandma and her sister Aunt Lela on the pies: apple, pumpkin, peach and cherry; several of each.
They also competed on what we called "The Green Stuff" and "The Pink Stuff" which were Jello salad/deserts of various kinds.
We usually had at least 20 people there, sometimes more than that.
After dinner the men stretched out in the living room and slept thru a football game. The rest of us got to clean up and pack away the left overs that could carry you till christmas.
*** The difference between stuffing and dressing is whether it was "stuffed" into the turkey (stuffing) or cooked on top the stove (dressing.)

What do you call "Stuffing" that's cooked in the oven but not in the bird?
Turkey
Stuffing and extra cooked in a baking dish
homemade crescent potato rolls
mashed potatoes
turkey gravy
green bean casserole
corn
2 kinds of apple pie: 2 crust style and crumb topped style
On occasional years (every 4-5 years) birthday cake because DS's bday sometimes falls on Thanksgiving: 2002 and now 2008 in his lifetime. SInce ds doesn't really like turkey I will make a big cheesesteak for him for lunch because that's what he wants that day and if he doesn't eat much turkey it's OK with me. When he turned 2 on THanksgiving he didn't care what we ate.
We usually eat at my mom's house but since my brother died and his family won't be coming and my ds doesn't want to go out on his bday we will have it at our house this year.

Growing up, we always had:
Turkey, of course!
Stove Top stuffing
Turkey gravy, canned
Sweet potato casserole (sometimes with marshmallows, sometimes without)
Cranberry sauce, canned
Mashed potatoes, real
Vegetable, either green beans or corn, canned
Rolls with butter, frozen
Pumpkin pie
I haven't had a chance to have my own Thanksgiving yet, but I know I'd change some things! Fresh, homemade food for one!

My childhood Thanksgivings were much like those posted here except that off to one side was a big table full of appetizers and it was tradition to stuff oneself on the veggie relishes and nacho dip while the turkey was still in the oven.
As an adult Thanksgiving looks a bit different with some pretty strict diet constraints with some of my family members. We always have salmon now, and rarely have a turkey. We usually have a non-dairy pie in addition to traditional pumpkin and veggies are usually more fresh rather than smothered in butter and sauces. Probably healthier, but it's different.
Side note-I unexpectedly, spontaneously ended up hosting most my family for Christmas dinner one year because our home was one hour from everyone. Dinner was chili and cornbread!!! It worked. The important part was being together and reconnecting and talking.

Kentucky Bourbon Sweet Potatoes
*6 large sweet potatoes, peeled, cut -up and boiled
1/3 cup good-quality bourbon
1 cup packed brown sugar, divided
2 teaspoons vanilla extract
1/2 teaspoon salt
pinch nutmeg
1/2 cup melted butter
1 cup pecans, coarsely crushed
Preheat oven to 350. In a large bowl, blend potatoes until smooth. Add bourbon, 1/2 cup brown sugar, 1/4 cup melted butter, vanilla and salt, and blend well. Spoon into a 13-by-9-inch baking pan. Combine remaining brown sugar, pecans and butter; mix well. Sprinkle evenly over potatoes. Bake 25 minutes or until top is browned.
*can substitute canned yams of desired(3-18 oz cans)
